Rava laddu – a quick easy and healthy Diwali treat!
In my home, the festival of Diwali starts at least 2 weeks before. With relatives and cousins, we would all sit together and start making sweets and snacks. And right from my childhood, I would nag my mom for just one particular variety of sweet – the rava laddu!
She knows, its simple, and easy, but, every year she will start by saying “NO” – as she kind of gets bored with repeating the same thing. But, ultimately I will get my way. After I got married, a similar trend continued. In my place was my neice and in my moms place was me. He loves the laddus I make. And I would like to share that with you all.
A quick, easy and a very traditional sweet recipe. All you need is some Rava (Sooji), Sugar and ghee! The perfect Diwali palagaram, that is done in minutes…
Ingredients:
Roasted Rava / Sooji – 1 cup
Sugar – 1 cup
Cardamom Powder – a pinch
Ghee – 1/4 cup + 2 tsp
Cashew nuts – 2 tbsp
Raisins – 2 tbsp
The Method:
- In a thick bottomed pan, add 1 cup of RAVA/SOOJI. And roast well, till a nice aroma rises. Do not let the rava to turn brown.
- Allow it to cool, completely.
- Meanwhile, in a mixie jar, add 1 cup of SUGAR and a pinch of CARDAMOM POWDER. Alternatively, you can add 2 pods of cardamom.
- Grind it to a fine powder and set it aside.
- In a pan, take 2 tsp of GHEE.
- Once the ghee is hot, add 2 tbsp of broken CASHEW NUTS, and 2 tbsp of RAISINS.
- Roasted well and set it aside.
- Now, the Rava will be cooled down. Add the Roasted rava in a mixie jar.
- Grind the Rava into a fine powder.
- In a bowl, add the Ground Roasted Rava Powder, Powdered Sugar, Roasted Cashew nuts and Raisins.
- Mix well. Use your hands to break down any lumps.
- Heat 1/4 cup of GHEE and add it to the mixture. Immediately the mixture should sizzle.
- Mix well for a minute. Once the mixture has cooled down just enough to touch, start making the laddus.
- Take a handful of the mixture and press well between both your palms. Once it starts hold together, shape it into round balls.
- The Hot ghee, will melt the sugar, thereby holding the Laddu together. So, make the laddus while the mixture is still warm.
- If the laddus break down, because the mixture is cooled down, add 1 tsp of hot ghee. And continue the procedure.
- Yummy, easy and tasty Rava laddus are ready! Enjoy!!
