SPICY CHICKEN ROAST – Serve hot with Rice / Roti!

For all the chicken lovers out there, here is an amazingly easy chicken fry recipe. Best served hot with both steamed rice or chapathi, or even as a side-dish to the yummy briyani!

I am going to be frank with you guys, unlike my other recipes, this is not exactly a recipe that was handed down to me from my family. It is more of me experimenting with a few of those handed-down-to-me recipes from my ancestors, along with a few of my favorite recipes that I found online.

After some experimentation, I am more than happy to share with you all, a simpler, quicker and easier recipe (than the ones I started my experiments with). So without further ado… lets dig in!

Ingredients:

Boneless Chicken – 1/4 kg

Red Chilli Powder – 1 tbsp

Coriander Powder – 1 tbsp

Turmeric Powder – a pinch

Garam masala Powder – 1 tsp

Pepper Powder – 1 tsp

Ginger Garlic Paste – 2 tbsp

Curd – 1/4 cup

Salt – to taste

Butter – 3 tbsp

Onion – 1 no Finely Chopped

Curry Leaves – a few (10-12no)

Tomato – 1 no Finely Chopped

Coriander leaves – a handful (to garnish)

The Method:

 

For Marinating:

  • In a bowl, add
    • 1 tbsp of RED CHILLI POWDER
    • 1 tbsp of CORIANDER POWDER
    • A pinch of TURMERIC POWDER
    • 1 tsp of GARAM MASALA POWDER
    • 1 tsp of PEPPER POWDER
    • 2 tbsp of GINGER GARLIC PASTE (Freshly ground is preferred)
    • 1/4 cup of CURD
    • And SALT to taste

Note: The curd tenderizes the chicken pieces, resulting in soft and juicy meat as the end product.

  • Mix all the ingredients well.
  • To that, add 1/4 kg of cleaned BONELESS CHICKEN PIECES.
  • Coat the chicken pieces on all sides with the marinate.
  • Cover and let the chicken marinate for at least 30 minutes in the refrigerator.

Note: more the time, the chicken marinates, better its taste!

For the Chicken roast:

  • After 30 minutes, heat a thick bottomed pan.
  • Add 3 tbsp of BUTTER and allow it to melt.
  • Once the butter is melted, add 1 number of FINELY CHOPPED ONION and a few (10-12 nos.) of CURRY LEAVES. Sauté for a minute.
  • To that, add 1 number of FINELY CHOPPED TOMATOES. Cook well until the tomatoes are turn mushy.
  • Add the marinated chicken along with the masala. Mix well and cook for 2 minutes.
  • Cover and cook for 10 to 15 minutes or until the chicken is cooked well.
  • After 15 minutes, roast the chicken, till the water is completely absorbed.
  • Finally garnish with a handful of Fresh Coriander Leaves.
  • Spicy Chicken roast is ready, enjoy with rice or roti of your choice!

This is not just easy, but also one of the yummiest ways of preparing the chicken. This recipe has become part of our routine Non-veg intake- as my husband loves it and asks me to prepare it every week!
