Mutton pepper chops

Any kind chops you come across will have the same way – add onions, tomato, ginger and garlic! But this is not like your usual gravy. The hero ingredient is the healthy Pepper kernels which has medicinal values too. The next main ingredient is a fresh bunch of coriander leaves, which is usually used as just a garnish. But here, the coriander leaves not only adds freshness to it, it also provides a lot of flavor, second to none!

This is quite easily one of the best recipes that has been a part of our family for generations. A very simple recipe, but I bet you would have not tasted anything like this ever before. So without further ado, lets jump right into the recipe!

Ingredients:

Mutton – 1/4 kg

Ginger Garlic Paste – 2 tbsp

Turmeric Powder – a pinch

To sauté and grind:

Oil – 1 tbsp

Pepper – 2 tsp

Onion – 1 no Roughly chopped

Coriander – 1 bunch

For the curry:

Oil – 2 tbsp

Cloves – 2 no

Cinnamon – 1 small piece

Jeera – 1 tsp

Pepper – 1 tsp

Onion – 1 no. Finely chopped

Curry leaves – 10 nos.

Chilli Powder – 1 tsp

Coriander powder – 1 tsp

Turmeric Powder – a pinch

Salt – to taste

Garam masala – 1 tsp

The Method:

To sauté and grind:

  • Take a thick bottomed pan and add 1 tbsp of oil
  • Once the oil is hot, add 2 tsp of pepper. Let it splutter
  • Now, add 1 no of roughly chopped onions. And sauté till onions turn translucent.
  • Add a bunch of cleanly washed – coriander leaves and cook well.
  • Take it off heat, let it cool completely and grind to a fine paste. Set it aside

Preparing the mutton:

  • In a pressure cooker, add 1/4 kg of cleaned and chopped mutton pieces.
  • To that, add 2 tbsp of ginger-garlic paste. (I prefer freshly ground paste to the store bought), and a pinch of Turmeric powder.
  • Mix all the ingredients together well. Add 1/2 cup water.
  • Cover and cook for 3 whistle (or simmer for 20 minutes).
  • The mutton should be soft to touch. Set it aside.

The gravy:

  • In the same thick bottomed pan, add 2 tbsp of oil.
  • Add all the spices
    • Cloves – 2 no
    • Cinnamon – 1 small piece
    • Jeera – 1 tsp
    • Pepper – 1 tsp
  • Sauté the spices and allow them to splutter
  • Add 1 no of sliced onion and 10nos. of curry leaves. And sauté for a minute.
  • To this, add
    • Chilli powder – 1 tsp
    • Coriander powder – 1 tsp
    • Turmeric Powder – a pinch
  • Cook till the raw smell goes.
  • Add the prepared – ground coriander onion paste. Mix well and cook for 2 minutes.
  • Now, add the pre-cooked mutton (with the ginger – garlic liquid).
  • Mix well and add salt to taste.
  • Add 1/2 cup of water.
  • Mix well and Cover and cook for 10 minutes.
  • After 10 minutes, open and mix the curry well.
  • Add 1 tsp of Garam masala powder and mix well.
  • Let the curry boil for 2 minutes and take off heat.
  • Spicy Mutton pepper chops is ready. Serve hot with plain rice or roti.

It is very special to me, not only because, it was the first Non-vegetarian recipes I learnt but also because, I just wooed my new family members, right after marriage! Believe it or not, it has become their favorite to! And with this recipe, I got the tag of a Kitchen superstar!
