Onion Egg Omelet – a Healthy Breakfast fix!
A different and unique way of preparing a healthy egg breakfast. With the inclusion of onions and ginger, and a few curry leaves this recipe adds a nice South Indian twist to your regular omelets. A quick and a wholesome breakfast with the side a few beautifully toasted Bread slices.
Ingredients:
EGGS – 4 NOS
OIL – 2 tbsp
GINGER – 1/2″ PIECE GRATED
CURRY LEAVES – 10 NOS.
ONION – 1 NO FINELY CHOPPED
TURMERIC POWDER – 1/4 TSP
BESAN FLOUR – 2 TBSP
SALT – TO TASTE
PEPPER POWDER – 2 TSP
GHEE – 1 TBSP (FOR FRYING)
The method:
- In a thick bottomed pan, add 2 tbsp of OIL.
- Once the oil is hot, Add Finely grated 1/2 “piece of ginger.
- Sauté for a minute and add a 10 nos. Chopped Curry Leaves.
- Add 1 no of Finely Chopped ONION and sauté well.

Add 1/4 tsp of TURMERIC POWDER. Mix well and set it aside.
- In a clean bowl, add 2 tbsp of BESAN FLOUR.
- Add SALT to taste. Mix well.
- Add 3- 4 tbsp of water and mix well, without lumps.
- To the mix, add 4 numbers of EGGS. Beat well.
- Add the prepared sautéed Onions and 2 tsp of PEPPER POWDER.

And mix well.
- Heat a dosa pan, spread 1 tbsp of GHEE.
- Pour a ladle of the OMELET mixture.
- Fry for 2 minutes on either side. Egg Onion Omelet is ready. Serve hot with a side of some toasted bread slices!
